Limitless Lent Vol. I

With the first week of Lent underway, my mother and I decided to have a different approach on whole idea of "giving up" an item. Instead of following through with removing an item, our primary focus was in the bettering of ourselves and our health. Lent season serves as a reminder to all and is a time to prepare mentally and spiritually for the celebration of Easter. A cookbook recently purchased in our home has been, '100 Days to Clean Eating'. In this book, a wide variety of recipes are scattered throughout, along with some divine desserts! We decide that throughout this Lent Season we would strive a bit harder to adapting nutritious, natural, and hearty meals into our diet. The point of this "project" isn't suppose to end once the 40 days are done and over with. This "project" is known now as Limitless Lent, and the importance of the improvement through spiritual practice, and the luscious foods that we consume.

To start all of this off, I sat down with my computer and the cookbook. I thumbed through all of the crisp pages and wrote out 40 days worth of recipes to try. A disclaimer is that I still am in college, so I premade these meals on Sunday so they would be ready for my family to eat on any given day throughout that week.

First week through this 'eating challenge' and I have found an importance of trial and error. It has been an adventure for me to experiment with these new recipes and make them my own. Although unfortunately I am no master chef, I am learning as I go, and I am enjoying this journey of cooking quality natural foods!

Crunch, Crunch, Crunch

I was needing to use up a batch of chocolate cookies that had not turned out well, so I was in search of a way to use them up! I stumbled across an Oreo bar recipe, and instead of having the base of the cookie bar be Oreos, I made it crushed up chocolate chip cookies. The best part was garnishing the top with M&M's and Oreo crumbles!

Now that you may be searching your cabinets for the closest chocolate bar, I will leave you here...
